Delete forgets by age; compact forgets by key, keeping the newest value per key.

Retention removes old segments whatever their content, so a rarely changing item can vanish entirely. Compaction asks a different question for each key: what is the latest value? The older values for that key become garbage while the newest stays, which fits topics representing current state, provided the key identifies the item.

Read it once, then a question tests whether the trick stuck.
